Ingredients
1/2 onion
3 cloves of garlic
1-2 dry chilies
2 medium/large tomatoes
5 curry leaves
10 g ginger
2 aubergines
1 chayote or 1/2 calabash
4 tbsp yellow split pea powder
1 tbsp madras masala
2 tbsp saffron
Procedure
Chop the aubergines, chayote/calabash and tomatoes, and finely cut the onion, garlic, chillies and ginger.
Fry the onion, garlic, ginger and curry leaves to light brown colour.
Next add the tomato, aubergine, chayote/calabash, chili, salt, masala, saffron and ground yellow split pea. Add water to just cover the ingredients in the pot.
Steam under a lid at medium to high heat.
