Seitan Coconut Wok

Ingredients

  1. 100 g Mushrooms

  2. 125 g Chow Mein Noodles (Dry)

  3. 50 g Red Bell Pepper

  4. 3 Cloves Garlic

  5. 100 g Onion

  6. 50 g Carrots

  7. 1/2 Tbsp Coconut Oil

  8. 2 Tsp Salt

  9. 100 g Cabbage

  10. 50 g Scallions

  11. 50 g Broccoli

  12. 1/2 Tbsp Ground Ginger

  13. 2 Tsp Ground Paprika

  14. 300 g Seitan

  15. 2 Tsp Black Pepper


Procedure

  1. Prepare the Chow Mein as instructed in the packaging (the amount in the ingredient list is that of dried chow mein).

  2. Cut seitan into desired shape (slices are nice!) and lightly bake in oven.

  3. Cut broccoli into medium size and boil in salted water till soft.

  4. Cut the mushrooms, red bell pepper, garlic, onion, carrots, cabbage and scallions into desired sized pieces.

  5. In a WOK pan heat coconut oil, add the onion, garlic, cabbage, ground ginger & paprika, and fry for about 5 min until softened.

  6. Add the mushrooms, red bell pepper, carrots and scallions, and fry until soft.

  7. Add the prepared noodles & seitan and mix it all. Add salt & pepper.
